Velveeta fudge sounds like a crazy idea, but it turns out it's crazy enough to work, resulting in a delightful treat.
Instructions
1
Prepare the pan
2
Line a 13x9-inch baking dish with waxed paper.
3
Melt the Velveeta and chocolate
4
Place the Velveeta, butter and chocolate in a large microwave-safe bowl. Microwave it in 30-second increments, stirring in between, until both ingredients have melted.
5
Mix the fudge
6
While beating with a hand mixer on low, slowly add the confectioners' sugar to the chocolate mixture until the sugar has fully incorporated, two to three minutes. Then beat in the vanilla extract and fold in the pecans.
7
Chill and cut
8
Transfer the fudge mixture to the prepared baking dish, and smooth it into an even layer. Then, cover and refrigerate the fudge for at least four hours. Once set, cut it into 1-inch squares.
