Bursting with pieces of juicy apple, warmly spiced with cinnamon and crowned with a sweet cloud of cream cheese frosting, this German apple cake is perfect for fall.

Ingredients
3 large eggs, room temperature
2 cups sugar
1 cup vegetable oil
1 teaspoon vanilla extract
2 cups all-purpose flour
2 teaspoons ground cinnamon
1 teaspoon baking soda
1/2 teaspoon salt
4 cups chopped peeled tart apples
3/4 cup chopped pecans
FROSTING:
1 package (8 ounces) cream cheese, softened
2 teaspoons butter, softened
2 cups confectioners' sugar
Instructions
1 Make the cake batter
2 Preheat the oven to 350°F. In a large bowl, beat the eggs, sugar, oil and vanilla. In a separate bowl, combine the flour, cinnamon, baking soda and salt. Add the dry ingredients to the egg mixture and mix well.
3 Add the apples and nuts
4 Fold the apples and nuts into the cake batter.
5 Bake the cake
6 Transfer the batter to a greased 13x9-inch baking pan. Bake for 55 to 60 minutes or until a toothpick inserted in the center comes out clean. Cool completely on a wire rack.
7 Top with frosting and serve
8 While the cake cools, beat together the cream cheese and butter in a small bowl. Add the confectioners' sugar and slowly beat until smooth. Spread the frosting evenly over the cake, then cut the cake into slices and serve.
