This chicken meatloaf is perfect for a cozy, comforting dinner without a lot of fuss. It has all the familiar flavors of classic meatloaf, but in a lighter, weeknight-friendly form.

1 lb. ground chicken ($3.72)
1 cup panko breadcrumbs (75g, $0.47)
½ small onion (very finely minced, (½ cup, 60g), $0.33)
1 carrot (grated, (¼ cup, 40g), $0.09)
1 Tbsp parsley (chopped, $0.11)
1 large egg ($0.17)
1 cup small-curd cottage cheese (215g, $0.91)
2 Tbsp ketchup (30g, $0.07)
1 Tbsp Dijon mustard (15g, $0.07)
1 Tbsp Worcestershire sauce (0.5 oz., $0.06)
1 tsp garlic powder ($0.03)
1 tsp paprika ($0.03)
1 tsp salt ($0.08)
½ tsp black pepper ($0.08)
¼ cup ketchup (60g, $0.14)
1 Tbsp brown sugar (13g, $0.13)
1 tsp Worcestershire ($0.02)
1 tsp apple cider vinegar ($0.01)
Instructions
1Gather and prep your ingredients, and preheat your oven to 375°F. Line a baking sheet with parchment paper.
2In a large bowl, add all the meatloaf ingredients. Gently mix until just combined.*
3Transfer the mixture to the prepared baking sheet and shape into an 8 x 5 inch loaf.**
4In a small bowl, stir together all the glaze ingredients. Brush half of the glaze evenly over the top of the meatloaf.
5Bake for 40 minutes, then remove from the oven and brush with the remaining glaze.
6Return to the oven and bake for 10–15 minutes more, or until the internal temperature reaches 165°F in the center.
7Let rest for 10 minutes before slicing. Serve warm and enjoy.
