This chorizo bowl is the kind of fast weeknight dinner that actually tastes like a treat.

Ingredients
2 teaspoons canola oil
1 package (12 ounces) fully cooked chorizo or jalapeno chicken sausage links, sliced
1 medium onion, chopped
1 can (15 ounces) no-salt-added black beans, rinsed and drained
1 can (10 ounces) diced tomatoes and green chiles, undrained
1 cup fresh or frozen corn
1 package (8.8 ounces) ready-to-serve brown rice
2 cups fresh baby spinach
1/4 cup crumbled queso fresco or shredded Monterey Jack cheese
Chopped fresh cilantro
Instructions
1 Brown the sausage
2 In a large skillet, heat the oil over medium heat. Add the sausage, then cook and stir it until it's lightly browned. Remove it from the pan.
3 Add the vegetables and simmer
4 Add the onion to the same skillet, then cook and stir for three to five minutes or until it's tender. Stir in the beans, tomatoes, corn and sausage, and bring the pan to a boil. Reduce the heat and simmer, uncovered, for five minutes.
5 Add the rice and spinach
6 Stir in the rice and spinach, and cook for two to three minutes or until everything has heated through and the spinach is wilted. Sprinkle bowls with the cheese and cilantro before serving.
