Hearty pork and potatoes is the definition of comfort food. This recipe will lead you to a dish that's wholesome, nourishing and easy to get on the table for dinner.

Ingredients
2 tablespoons butter, divided
1 pork tenderloin (1 pound), cut into 1/4-inch slices
1 cup sliced fresh mushrooms
2 garlic cloves, minced
8 small red potatoes, quartered
1 can (14-1/2 ounces) reduced-sodium chicken broth, divided
2 teaspoons Worcestershire sauce
1/4 teaspoon salt
1/4 teaspoon pepper
2 tablespoons all-purpose flour
4 green onions, sliced
Instructions
1 Sear the pork
2 In a 12-inch skillet, heat 1 tablespoon of the butter over medium heat. Cook the pork for two to four minutes on each side or until tender, then remove it from the pan.
3 Cook the potatoes and flavorings
4 In the same pan, heat the remaining 1 tablespoon of butter over medium-high heat. Add the mushrooms, then cook and stir until they're almost tender. Add the garlic, and cook for one minute longer. Stir in the potatoes, 1-1/2 cups of the broth, the Worcestershire sauce and the salt and pepper. Bring the mixture to a boil, then reduce the heat and simmer, covered, for 10 to 15 minutes or until the potatoes are tender.
5 Thicken the sauce
6 In a small bowl, mix the flour and the remaining broth until smooth. Stir the flour mixture into the mushroom mixture. Bring it to a boil, then cook and stir until the sauce is thickened. Stir in the green onions.
7 Add the pork and finish heating
8 Return the pork to the pan and heat it through.
