There's no topping a savory potato chowder on a chilly day, especially if it's garnished with crispy bacon bits and chopped chives. This slow-cooker recipe is easy to assemble and so comforting to come home to.
Ingredients
8 cups diced potatoes
3 cans (14-1/2 ounces each) chicken broth
1 can (10-3/4 ounces) condensed cream of chicken soup, undiluted
1/3 cup chopped onion
1/4 teaspoon pepper
1 package (8 ounces) cream cheese, cubed and softened
1/2 pound sliced bacon, cooked and crumbled, optional
Minced chives, optional
Instructions
1Add ingredients to the slow cooker
2In a 5-quart slow cooker, combine the diced potatoes, chicken broth, cream of chicken soup, chopped onion and pepper. Cover and cook on low for 8 to 10 hours or until the potatoes are fork-tender.
3Stir in the cream cheese
4Add the cream cheese, gently stirring until everything is blended and well combined.
5Garnish and serve
6Before serving, top each bowl of chowder with crispy bacon bits and chives, if desired.
