Potato Chowder
480 min12 servings

There's no topping a savory potato chowder on a chilly day, especially if it's garnished with crispy bacon bits and chopped chives. This slow-cooker recipe is easy to assemble and so comforting to come home to.

Ingredients
8 cups diced potatoes
3 cans (14-1/2 ounces each) chicken broth
1 can (10-3/4 ounces) condensed cream of chicken soup, undiluted
1/3 cup chopped onion
1/4 teaspoon pepper
1 package (8 ounces) cream cheese, cubed and softened
1/2 pound sliced bacon, cooked and crumbled, optional
Minced chives, optional
Instructions
1 Add ingredients to the slow cooker
2 In a 5-quart slow cooker, combine the diced potatoes, chicken broth, cream of chicken soup, chopped onion and pepper. Cover and cook on low for 8 to 10 hours or until the potatoes are fork-tender.
3 Stir in the cream cheese
4 Add the cream cheese, gently stirring until everything is blended and well combined.
5 Garnish and serve
6 Before serving, top each bowl of chowder with crispy bacon bits and chives, if desired.
