Peanut Chicken Stir-Fry

Make a mouthwatering peanut chicken stir-fry with rice noodles, strips of chicken and a medley of colorful vegetables. This wholesome and flavorful meal is perfect for any occasion.

Ingredients
8 ounces uncooked thick rice noodles
1/3 cup water
1/4 cup reduced-sodium soy sauce
1/4 cup peanut butter
4-1/2 teaspoons brown sugar
1 tablespoon lemon juice
2 garlic cloves, minced
1/2 teaspoon crushed red pepper flakes
2 tablespoons canola oil, divided
1 pound boneless skinless chicken breasts, cut into 1/2-inch strips
1 bunch broccoli, cut into florets
1/2 cup shredded carrot
Sesame seeds, optional
Instructions
1 Cook the noodles
2 Cook the rice noodles according to the package directions.
3 Make the peanut sauce
4 In a small bowl, combine the water, soy sauce, peanut butter, brown sugar, lemon juice, garlic and red pepper flakes. Give it a good whisk until well combined, then set it aside.
5 Cook the chicken
6 In a large skillet, heat 1 tablespoon canola oil over medium-high heat. Add the chicken, and stir-fry the poultry until it is no longer pink, a few minutes on each side. Remove the chicken from the pan and set it aside.
7 Cook the veggies
8 Add the broccoli and carrots to the same skillet with the remaining oil, stir-frying the veggies until crisp-tender, four to six minutes. Add the soy sauce mixture, and bring the pan to a boil. Cook and stir the sauce until thickened, one to two minutes longer.
9 Toss the stir-fry
10 Return the cooked chicken to the pan and heat it through. Drain the noodles, and toss them in the pan with the chicken and veggies. If desired, sprinkle with sesame seeds before serving.
