Tender, moist teriyaki mahi mahi is a delicious take on this favorite tropical fish, and thanks to a flavor-packed glaze, it goes well with simple side dishes like white rice and steamed vegetables.

Ingredients
4 mahi mahi fillets (6 ounces each)
1/4 teaspoon garlic powder
1/4 teaspoon pepper
1 tablespoon canola oil
1 teaspoon minced fresh gingerroot
1/4 cup reduced-sodium teriyaki sauce
Instructions
1 Prep the mahi mahi
2 Sprinkle the mahi mahi with garlic powder and pepper.
3 Cook the mahi mahi
4 In a large skillet, cook the mahi mahi in oil over medium-high heat for four to five minutes on each side, or until the fish flakes easily with a fork. Remove the fish and keep it warm. Editor's Tip: Mahi mahi is known for drying out easily. To avoid this, remove the fish from the heat just before it's done. Wrap it in foil to allow it to continue cooking, as well as to keep it moist.
5 Make the sauce
6 In the same skillet, saute the ginger for 30 seconds. Stir in the teriyaki sauce, and it heat through. Serve the sauce over the fish.
