In deep summer when fragrant peaches are finally in season, break out this peach cobbler for two recipe to turn any sticky summer evening into a sweet one.

Ingredients
3 tablespoons brown sugar
2 teaspoons cornstarch
1/4 cup water
1-1/2 cups sliced fresh or frozen peaches
1 tablespoon butter
1 teaspoon lemon juice
TOPPING:
1/3 cup all-purpose flour
2 tablespoons sugar
1/2 teaspoon baking powder
Pinch salt
2 tablespoons whole milk
4-1/2 teaspoons butter, melted
1/4 teaspoon grated orange zest
Vanilla ice cream, optional
Instructions
1 Precook the filling
2 Preheat the oven to 400°F. In a small saucepan, whisk together the brown sugar, cornstarch and water until smooth. Add the sliced peaches and bring everything to a boil. Once boiling, cook and stir the mixture for two minutes. This activates the cornstarch, thickening the filling. Reduce the heat to low, then stir in the butter and lemon juice until combined.
3 Create the topping
4 In a bowl, whisk together the all-purpose flour, sugar, baking powder and salt. Stir in the whole milk, melted butter and orange zest until thoroughly combined.
5 Assemble the cobbler
6 Carefully pour the hot peach mixture into an ungreased 2-cup baking dish. Evenly spoon the topping all over the peaches.
7 Bake the cobbler
8 Slide the peach cobbler into the oven and bake, uncovered, until the topping is golden brown and the filling is bubbling, about 25 minutes. Allow the cobbler to cool at room temperature for a bit before eating. To serve, scoop out portions into bowls and, if desired, serve with vanilla ice cream.
