Every bite of this apple crisp has tart, tender apples and a cinnamon streusel topping. It smells like heaven when it's baking too!

Ingredients
1 cup all-purpose flour
3/4 cup rolled oats
1 cup packed brown sugar
1 teaspoon ground cinnamon
1/2 cup butter, softened
4 cups chopped peeled apples
1 cup sugar
2 tablespoons cornstarch
1 cup water
1 teaspoon vanilla extract
Vanilla ice cream, optional
Instructions
1 Make the streusel
2 Preheat your oven to 350°F. In a large bowl, combine the flour, oats, brown sugar and cinnamon.Use a pastry blender to cut in the butter until the mix is crumbly. Press half the streusel into a greased 2-1/2-quart baking dish or a 9-inch-square baking pan. Evenly cover the layer of streusel with the chopped apples. Editor's Tip: Place the remaining streusel in the fridge until ready to use.
3 Make the syrup
4 In a small saucepan, combine the sugar, cornstarch, water and vanilla. Bring to a boil. Cook and stir for two minutes or until the syrup is thick and clear. Pour the syrup over the apple layer in your baking dish.
5 Sprinkle with streusel topping
6 Sprinkle the apples with the remaining crumb mixture.
7 Bake the crisp
8 Bake for 60 to 65 minutes, or until the apples are tender. Serve warm, with a generous scoop of ice cream.
