This pina colada slush is basically a vacation in a freezer-safe container. Make it ahead and enjoy it as a virgin slushie, or add a splash of rum for the full beach-bar experience.
Ingredients
3 cans (6 ounces each) unsweetened pineapple juice
2 cups water
1 can (10 ounces) frozen nonalcoholic pina colada mix or 10 ounces pina colada mix
1 tablespoon lime juice
3-1/2 teaspoons Crystal Light lemonade drink mix
6 cups lemon-lime soda, chilled
Instructions
1Mix the pina colada
2In a large bowl, combine the pineapple juice, water, pina colada mix, lime juice and lemonade mix. Stir until the drink mix is completely dissolved.
3Freeze the pina colada
4Pour the mixture into a 2-quart freezer container, and freeze for at least six hours or overnight.
5Add the soda
6About 45 minutes before serving, remove the container from the freezer to soften slightly. For each serving, combine 1/2 cup slush mixture with 1/2 cup lemon-lime soda. Editor's Tip: Wait to mix the slushie base with soda until just before serving to keep the bubbles fresh and fizzy.
