Skillet Meat Loaf
Skillet Meat Loaf
20 min2 servings

This convenient and flavorful skillet meat loaf cooks in just 30 minutes, using only one pan. It's perfect for a fuss-free dinner on busy evenings, without sacrificing taste.

Ingredients
3 tablespoons 2% milk
2 tablespoons quick-cooking oats
1 tablespoon chopped onion
1/8 teaspoon salt
1/2 pound lean ground beef
1/2 teaspoon cornstarch
1/2 cup Italian tomato sauce
1/4 cup cold water
Instructions
1 Prepare the meat loaf mixture
2 In a small bowl, combine the milk, oats, onion and salt. Crumble the beef over that mixture, and mix lightly but thoroughly. Shape the mixture into two loaves. Editor's Tip: When preparing your meat loaf mixture, remember that overmixing can lead to toughness. To keep your meat loaf moist and tender, mix until your ingredients are just combined.
3 Brown the loaves
4 In a nonstick skillet, brown the meat loaves on all sides, allowing a savory crust to form and seal in the juices, then drain. Editor's Tip: Browning the loaves on all sides gives a delectable texture and layers the flavors.
5 Make the sauce
6 Whisk together the cornstarch, tomato sauce and water till smooth, then pour the mixture over the loaves. Bring to a boil. Reduce the heat to medium-low, then cover and simmer until the meat is no longer pink, 15 to 20 minutes.
