This lemon pasta recipe skips the cream and the butter but gets loads of flavor from lemon, Parmesan cheese, garlic and fresh parsley. It's also versatile enough to accompany chicken, fish, seafood or pork.
Ingredients
8 ounces uncooked angel hair pasta
1/4 cup minced fresh parsley
3 teaspoons grated lemon zest
2 teaspoons minced garlic
6 tablespoons olive oil
3 tablespoons lemon juice
1/2 teaspoon salt
1/4 teaspoon pepper
1/3 cup grated Parmesan cheese
Instructions
1Make the sauce
2Cook the pasta according to the package directions. Meanwhile, in a large skillet, saute the parsley, lemon zest and garlic in oil until the garlic becomes tender. Editor’s Tip: Don’t forget to season your pasta water with salt before adding the dried pasta for a better tasting result!
3Combine all the ingredients
4Drain the pasta, then add it to the skillet with the garlic. Sprinkle it with the lemon juice, salt and pepper, and toss to coat. Top with Parmesan cheese before serving.
