This chicken gnocchi skillet is a saucy alternative to spaghetti, with a rich tomato meat sauce and pillowy, soft potato dumplings.
Ingredients
1 package (16 ounces) potato gnocchi
1 pound ground chicken
1/2 cup chopped onion
2 tablespoons olive oil
1 jar (26 ounces) spaghetti sauce
1/4 teaspoon salt
1/4 to 1/2 teaspoon dried oregano
Shredded Parmesan cheese, optional
Instructions
1Cook the gnocchi
2Bring a pot of salted water to a boil and cook the gnocchi according to the package directions.
3Cook the chicken and onion
4Meanwhile, in a large cast-iron or other heavy skillet, cook the chicken and onion in oil over medium heat until the chicken is no longer pink. Drain any liquid if necessary.
5Add the sauce and seasonings
6Stir in the spaghetti sauce, salt and oregano, then cook until the mixture is heated through, 5 to 10 minutes.
7Combine with gnocchi
8Drain the gnocchi and gently stir it into the skillet. If desired, sprinkle the chicken gnocchi skillet with Parmesan cheese.
