This chicken gnocchi skillet is a saucy alternative to spaghetti, with a rich tomato meat sauce and pillowy, soft potato dumplings.

Ingredients
1 package (16 ounces) potato gnocchi
1 pound ground chicken
1/2 cup chopped onion
2 tablespoons olive oil
1 jar (26 ounces) spaghetti sauce
1/4 teaspoon salt
1/4 to 1/2 teaspoon dried oregano
Shredded Parmesan cheese, optional
Instructions
1 Cook the gnocchi
2 Bring a pot of salted water to a boil and cook the gnocchi according to the package directions.
3 Cook the chicken and onion
4 Meanwhile, in a large cast-iron or other heavy skillet, cook the chicken and onion in oil over medium heat until the chicken is no longer pink. Drain any liquid if necessary.
5 Add the sauce and seasonings
6 Stir in the spaghetti sauce, salt and oregano, then cook until the mixture is heated through, 5 to 10 minutes.
7 Combine with gnocchi
8 Drain the gnocchi and gently stir it into the skillet. If desired, sprinkle the chicken gnocchi skillet with Parmesan cheese.
