Who says you need wheat flour to make crispy fried chicken? We coat our keto fried chicken with a flavorful combination of almond flour, Parmesan cheese and savory seasonings.

Dredge the chicken

In a shallow dish, whisk the cream, eggs, salt and pepper. In another shallow bowl, combine the almond flour, Parmesan cheese, garlic powder, salt and pepper. Dip the chicken in the cream mixture, then dip it in the almond flour coating and coat both sides. Shake off the excess flour.

Rest the chicken

Arrange the chicken on a wire rack over a baking sheet. Let stand 30 minutes.

Deep-fry the chicken

In an electric skillet or deep fryer, heat the oil to 375°F. Fry the chicken, several pieces at a time, until the chicken is golden brown and the juices run clear, six to seven minutes on each side. Drain the chicken on paper towels before serving. Editor's Tip: If the coating looks finished but the chicken isn't cooked through, transfer it to a wire rack set inside a baking sheet. Bake the chicken in a 350° oven until it reaches an internal temperature of 165° for white meat and 175° for dark meat.
