When you can’t get enough of banana bread, try these vegan banana muffins too. Go the extra-sweet way by adding chocolate chips, or go the savory route and mix in chopped walnuts.
Ingredients
1-1/2 cups all-purpose flour
1 cup sugar
1 teaspoon baking soda
1/2 teaspoon salt
3 medium ripe bananas
1/3 cup vegetable oil
1 teaspoon vanilla extract
1/2 cup semisweet chocolate chips or chopped walnuts, optional
Instructions
1Mix the batter
2Preheat the oven to 375°F. In a large bowl, whisk together the flour, sugar, baking soda and salt. In a separate bowl, mash the bananas until smooth. Add the oil and vanilla extract to the bananas and mix until well-combined. Add the wet ingredients to the dry ingredients, stirring just until moistened. If desired, fold in chocolate chips or chopped walnuts. Editor’s Tip: Don’t overmix the batter—stirring too much develops the flour’s gluten and can make the muffins dense. Mix until the dry ingredients disappear; a few small lumps are OK.
3Fill the muffin pan
4Grease a muffin pan with vegan cooking spray or line the cups with paper liners. Spoon the batter into the muffin cups, filling each about halfway.
5Bake for 18 to 22 minutes or until a toothpick inserted in the center of a muffin comes out clean. Let the muffins cool in the pan for 10 minutes, then transfer them to a wire rack to cool completely.
