When you make dinner rolls in a bread machine, it's easy to have soft, fluffy rolls with every evening meal.

Add the ingredients to a bread machine

In the bread machine pan, add the water, butter, egg, salt, flour, sugar, nonfat dry milk powder and quick-rise yeast in the order recommended by the manufacturer. Select the dough setting. Check the dough after five minutes of mixing, then add 1 to 2 tablespoons of water if the dough looks too dry or 1 to 2 tablespoons of flour if it looks too slack. You're looking for a smooth, elastic dough that is a little tacky.

Shape the dinner rolls

When the bread machine cycle is complete, turn the dough out onto a lightly floured surface. Divide the dough into 24 pieces and roll them into balls. Roll each ball into an 8-inch rope. Tie a loose knot and tuck the ends underneath. Editor's Tip: If you want evenly sized rolls, a food scale on the gram setting can help you divide dough into even pieces. Start by dividing the dough in half, and continuing to split each part in half until you reach 24 pieces.

Let the rolls rise

Place the rolls 1-1/2 inches apart on a greased baking sheet. Cover them with a clean towel and let them rise in a warm place until they've doubled in size, about 30 minutes. Preheat the oven to 400°F as the rolls proof.

Brush the rolls with egg wash and bake

Whisk the egg and water together, then brush over the rolls. Bake the rolls for eight to nine minutes or until they're golden brown. Transfer them to wire racks, and serve them warm.
