Onion pie is as simple as it sounds. This frittata-like dish combines eggs, onions, breadcrumbs and cheese. It's a delicious choice for any meal.
Ingredients
6 to 8 medium onions, thinly sliced
2 tablespoons canola oil
6 large eggs
1 cup soft bread crumbs
1/2 cup grated Parmesan cheese
1/2 cup minced fresh parsley
Instructions
1Cook the onions
2Add some oil to a large skillet and saute the onions until they're soft but not yet brown. Drain the onions.
3Mix the unbaked pie filling
4Whisk the eggs in a large bowl and add the breadcrumbs, cheese and parsley. Stir in the onions and make sure all the ingredients are combined.
5Bake that pie
6Grease a 10-inch pie plate. Pour the mixture into the pie plate and bake at 350°F for about 35 to 40 minutes. A knife inserted in the center of the pie should come out clean.
