This apple custard pie recipe turns the popular fall dessert into a decadent treat. The shortbread pie crust is easy to make and adds a fun texture to the pie.

Ingredients
1-1/2 cups all-purpose flour
1 tablespoon sugar
1/2 teaspoon salt
1/2 cup cold butter, cubed
APPLES:
2 tablespoons butter
3 cups thinly sliced peeled Honeycrisp or tart apples, (about 4 medium)
1/3 cup packed brown sugar
1 teaspoon ground cinnamon
CUSTARD:
1 cup heavy whipping cream
1 large egg, room temperature
1/2 cup sugar
1 teaspoon vanilla extract
Instructions
1 Preheat oven to 350°. In a small bowl, combine flour, sugar and salt; cut in butter until crumbly. Press onto the bottom and up the sides of a 9-in. pie plate; refrigerate until firm, about 30 minutes.
2 In a large skillet, melt butter over medium heat. Add apples, brown sugar and cinnamon; cook until apples are slightly soft, 5-6 minutes, stirring occasionally. Let cool,5-10 minutes. Arrange apples into bottom of pie crust in even layers.
3 In a small bowl, whisk cream, egg, sugar and vanilla until smooth; slowly pour over apples. Place pie plate on a rimmed baking sheet; bake 35-40 minutes or until a knife inserted in the center comes out clean, covering with foil if crust begins to get too dark. Cool on a wire rack for 1 hour. Refrigerate for at least 2 hours before serving.
