Fried asparagus is a crispy and savory appetizer that can be dipped into flavorful sauces. Even though they're deep-fried, these asparagus count as eating your veggies, right?

Ingredients
1 cup all-purpose flour
3/4 cup cornstarch
1-1/4 teaspoons salt
1-1/4 teaspoons baking powder
3/4 teaspoon baking soda
3/4 teaspoon garlic salt
1/2 teaspoon pepper
1 cup beer or nonalcoholic beer
3 large egg whites
2-1/2 pounds fresh asparagus, trimmed
Oil for deep-fat frying
Ranch salad dressing
Instructions
1 Make the batter
2 In a large bowl, combine the flour, cornstarch, salt, baking powder, baking soda, garlic salt and pepper. In a separate bowl, combine the beer and egg whites. Stir the beer mixture into the flour mixture just until moistened. Dip the asparagus into the batter.
3 Fry the asparagus
4 In a deep cast-iron or electric skillet, heat 1-1/2 inches of oil to 375°F. Fry the asparagus in batches until golden brown, two to three minutes on each side. Drain the asparagus on paper towels. Serve it immediately with ranch dressing. Editor's Tip: Make sure not to crowd the pan while frying.
