Don't let a holiday go by without baking these traditional almond cookies rolled in pine nuts.

1-1/4 cups (12 ounces) almond paste
1/2 cup sugar
4 large egg whites, room temperature, divided
1 cup confectioners' sugar
1-1/2 cups pine nuts

1Combine ingredients
2In a small bowl, beat the almond paste and sugar until crumbly. Beat in two egg whites. Gradually add confectioners' sugar; mix well.
3Prepare the dough
4. Whisk the remaining egg whites in a shallow bowl. Place the pine nuts in another shallow bowl. Shape the dough into 1-inch balls. Roll in the egg whites and coat with pine nuts. Place two inches apart on parchment-lined baking sheets. Flatten slightly.
5Bake the cookies at 325°F until lightly browned (about 15 to 18 minutes). Cool for one minute before removing from pans to wire racks.
