Ingredients
4 cups all-purpose flour
4 teaspoons baking powder
2 teaspoons ground ginger
1-1/2 teaspoons ground cinnamon
1-1/4 teaspoons ground cloves
1-1/4 teaspoons ground nutmeg
1 teaspoon baking soda
1/2 teaspoon salt
2 cups packed brown sugar
1/2 cup butter, melted
3 tablespoons molasses
2 large egg, room temperature
1-1/2 cups whole milk
2 teaspoons vanilla extract
Instructions
1 Mix the dry ingredients
2 Preheat oven to 350°F, then grease two 9x5-inch loaf pans and set them aside. In a large bowl, combine dry ingredients: the flour, baking powder, baking soda and spices (ginger, cinnamon, cloves, nutmeg). Add a pinch of salt and make sure everything is well-mixed.
3 Mix the wet ingredients
4 Next, combine wet ingredients and brown sugar in another bowl. Whisk the melted butter, molasses, eggs, milk, vanilla extract and sugar until the granules have dissolved in the liquid.
5 Marry the mixes
6 Stir the wet mixture into the dry ingredients just until moistened, then pour the dough into the prepared loaf pans waiting nearby.
7 Bake the loaves until a toothpick inserted in the center comes out clean—around 60 to 70 minutes. Cool the bread for 10 minutes or so, before removing from pans to wire racks.
