Ham and bean soup is the perfect weeknight dinner. The recipe deliciously repurposes leftover ham and only takes 30 minutes to prepare. What more could you ask for?

Ingredients
2 medium carrots, sliced
2 celery ribs, chopped
1/2 cup chopped onion
2 tablespoons butter
4 cans (15-1/2 ounces each) great northern beans, rinsed and drained
4 cups chicken broth
2 cups cubed fully cooked ham
1 teaspoon chili powder
1/2 teaspoon minced garlic
1/4 teaspoon pepper
1 bay leaf
Instructions
1 Make the mirepoix
2 In a large saucepan, saute the carrots, celery and onion in butter until tender.
3 Add the remaining ingredients
4 Stir in the rinsed, drained great northern beans. Add the chicken broth, cubed ham, chili powder, minced garlic, pepper and bay leaf.
5 Let the ham and bean soup simmer
6 Bring the soup to a boil. Reduce the heat and cook for 15 minutes or until heated through. Discard the bay leaf before serving.
