Ingredients
CROUTONS:
1 cup cubed French bread
1 tablespoon olive oil
1/4 teaspoon garlic salt
1/8 teaspoon pepper
CHICKEN:
4 boneless skinless chicken breasts (6 ounces each)
3/4 teaspoon salt
1/4 teaspoon pepper
2 tablespoons canola oil
DRESSING:
1/3 cup mayonnaise
3 tablespoons olive oil
2 tablespoons grated Parmesan cheese
2 tablespoons lemon juice
2 teaspoons Dijon mustard
2 teaspoons Worcestershire sauce
2 teaspoons anchovy paste
1 garlic clove, minced
1/4 teaspoon salt
1/4 teaspoon pepper
SALAD:
6 cups torn romaine
1/4 cup grated Parmesan cheese
Instructions
1 Make the croutons
2 To make the croutons, preheat the oven to 400°F and place the bread in a large bowl. Combine the remaining ingredients, drizzle them over bread and toss to coat. Then, place the croutons in a single layer in an ungreased 15x10x1-inch baking pan. Bake until golden brown, about 15 to 20 minutes, stirring occasionally.
3 Cook the chicken
4 Meanwhile, sprinkle the chicken with salt and pepper. In a large skillet, heat the oil over medium heat. Add chicken and cook until a thermometer reads 165° (about five to six minutes on each side). Remove to a cutting board and let rest for about ten minutes. Cut into 1-inch chunks.
5 Combine dressing ingredients
6 In a large bowl, combine the dressing ingredients. Add the lettuce, chicken, croutons and Parmesan cheese. Toss to coat and serve the salad.
