Layer the cookie pieces

Line an 8-inch square dish with aluminum foil, then coat it with cooking spray. Place half the broken cookie pieces in the pan.

Make the white chocolate fudge

In a heavy saucepan, combine the milk, butter and white chocolate chips. Cook and stir over low heat until the chips are melted. Remove the mixture from the heat, and stir in the vanilla. Pour the fudge over the cookie pieces in the pan. Editor's Tip: There are multiple ways to melt chocolate, but it's always best to work low and slow with white chocolate. It has a lower burn point and higher fat content than other types of chocolate, so it's more prone to seizing, which will give the fudge a lumpy, grainy texture.

Top with the remaining cookie pieces
