Dirty Rice with Ground Beef

Dirty rice with ground beef is a departure from the typical chicken liver-centric version, but it's just as tasty. This recipe also cooks in just 30 minutes, quick enough for an improvised weeknight meal.

Ingredients
1 pound lean ground beef (90% lean)
3 celery ribs, chopped
1 small green pepper, chopped
1 small sweet red pepper, chopped
1/4 cup chopped onion
2 cups water
1 cup instant brown rice
1 tablespoon minced fresh parsley
1 tablespoon Worcestershire sauce
2 teaspoons reduced-sodium beef bouillon granules
1 teaspoon Cajun seasoning
1/4 teaspoon crushed red pepper flakes
1/4 teaspoon pepper
1/8 teaspoon garlic powder
Instructions
1 Cook the beef and vegetables
2 In a large skillet, cook the ground beef, celery, green and red peppers, and onion over medium heat until the beef is no longer pink, 8 to 10 minutes. Crumble the beef and drain any excess grease. Editor's Tip: Use a spatula or wooden spoon to crumble the beef as it cooks.
3 Finish the dirty rice
4 Stir in the water, rice, parsley, Worcestershire sauce, bouillon and Cajun seasoning, crushed red pepper flakes, pepper and garlic powder. Bring the mixture to a boil, then reduce the heat. Simmer, covered, until the rice is tender, 12 to 15 minutes.
