Chicken Broccoli Rice Casserole

This cheesy chicken broccoli rice casserole is a delicious combination of flavorful chicken, tender broccoli, fluffy rice and a crisp cracker topping.

Ingredients
1 tablespoon butter
1-1/4 cups uncooked instant rice
1-1/2 cups reduced-sodium chicken broth
3/4 cup 2% milk
2 cans (10-1/2 ounces each) condensed cream of chicken or mushroom soup, undiluted
1 teaspoon garlic powder
1 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon onion powder
2 cups cubed cooked chicken breast
2 cups fresh broccoli florets
2 cups shredded cheddar cheese, divided
TOPPING:
1 cup crushed Ritz crackers
2 tablespoons butter, melted
Instructions
1 Prep the rice filling
2 Preheat the oven to 375°F. In a Dutch oven, melt 1 tablespoon butter over medium heat. Add the instant rice, broth, milk, condensed cream of chicken soup, garlic powder, salt, pepper and onion powder. Stir until well combined.
3 Add the chicken
4 Stir in the chicken, broccoli and 1 cup shredded cheddar cheese. Cook until heated through, five to seven minutes. Top with the remaining 1 cup cheese.
5 Bake the casserole
6 Cover the Dutch oven. Bake the casserole until the cheese is bubbly and the rice is cooked, 20 to 25 minutes. Remove the casserole from the oven.
7 Toast the topping
8 Turn the oven to a broil function. Meanwhile, in a small bowl, stir together the crushed Ritz crackers and melted butter. Sprinkle evenly over the casserole. Broil 2 to 3 inches from the heat for two to three minutes or until the cracker topping is golden brown.
