A Caprese sandwich highlights simple, seasonal ingredients for a fresh and delicious bite. Juicy tomatoes, fresh mozzarella and basil are layered on a baguette and drizzled with olive oil and balsamic glaze.
Ingredients
1 French bread baguette (11 ounces)
2 large heirloom tomatoes, sliced
8 ounces fresh mozzarella cheese, sliced
1/2 teaspoon sea salt
1/2 teaspoon coarsely ground pepper
4 tablespoons olive oil
2 tablespoons balsamic glaze, optional
16 fresh basil leaves
Instructions
1Slice the baguette and toast, if desired
2Slice the baguette in half lengthwise. Cut each half into four equal portions to make four sandwiches. If you prefer toasted bread, place the baguette halves, cut side down, in a hot dry skillet until lightly toasted. Editor’s Tip: If toasting the baguette, rub a peeled garlic clove against the cut sides of the bread to infuse it with extra flavor and aroma.
3Assemble the sandwiches
4Layer tomato slices and sliced mozzarella on each baguette bottom. Drizzle with olive oil and, if desired, balsamic glaze. Sprinkle with salt and pepper.
