Combine toasted rice, a few pantry staples and fresh herbs for a flavor-packed herbed rice pilaf.
Ingredients
1 cup uncooked long grain rice
1 cup chopped celery
3/4 cup chopped onion
1/4 cup butter, cubed
2-1/2 cups water
1 package (2 to 2-1/2 ounces) chicken noodle soup mix
1 teaspoon dried thyme
1/4 teaspoon rubbed sage
1/4 teaspoon pepper
2 tablespoons fresh minced parsley
1 tablespoon chopped pimientos, optional
Instructions
1Saute the aromatics
2Melt butter in a large skillet over medium heat. Add rice, celery and onion and cook until vegetables are soft and rice starts to turn golden.
3Simmer the pilaf
4Add the remaining ingredients except the parsley and pimiento to the skillet, then bring it to a boil. Reduce to a low simmer, cover and cook for 15 minutes until rice is tender. Stir in the parsley and pimientos (if you like).
5Finish the dish
6Remove the skillet from the heat, cover and let it stand for 10 minutes. Remove the lid and fluff the rice with a fork.
