Homemade caramel apple cookies are a fall favorite. They combine the rich flavors of caramel, brown sugar, oats and fresh apples. Easy to make and perfect for the season, these cookies offer a delightful taste of autumn with every bite.

Ingredients
1/2 cup butter, softened
3/4 cup packed brown sugar
1/4 cup sugar
1 package (3.4 ounces) instant caramel or butterscotch pudding mix
2 large eggs, room temperature
1/2 cup unsweetened applesauce
1-1/4 cups all-purpose flour
1 teaspoon baking soda
3-1/2 cups old-fashioned oats
1 medium apple, peeled and chopped
Instructions
1 Cream the ingredients
2 Preheat the oven to 350°F. In a large bowl, cream the butter, sugars and pudding mix until light and fluffy (about five to seven minutes). Add the eggs and mix well. Beat in applesauce.
3 Combine other ingredients
4 In another bowl, whisk the flour and baking soda and gradually beat in creamed mixture. Stir in the oats and apple.
5 Drop dough by tablespoonfuls two inches apart onto greased baking sheets. Bake until golden brown, about 15 to 18 minutes. Cool on pans for three minutes. Serve warm or remove to wire racks to cool completely.
