Make the coating

In a shallow dish, toss the flour with the seasoned salt, poultry seasoning, paprika, ground mustard and pepper.

Cut the chicken and coat it in flour

Flatten the chicken breasts to 1/2-inch thickness, and then cut the meat into 1-1/2-inch pieces. Add the chicken pieces, a few at a time, to the dish with the seasoned flour and turn to coat. Continue with the rest of the chicken. Editor’s Tip: To pound the chicken, place the breasts on a cutting board and cover with plastic wrap. This will keep raw chicken juices from flying around your kitchen.

In a large skillet, heat the oil until it shimmers. Cook the chicken pieces in batches until the meat is no longer pink, six to eight minutes. Editor’s Tip: The best oil temperature for frying anything is between 350° and 375°F. You can always temp the oil before frying these nuggets, but it will heat up quickly since it’s such a small amount.
