Grilled lemon chicken is easy to prep ahead, and when you're about ready to eat, all you need to do is fire up the grill. No matter who you're serving, they'll love the citrus in this flavorful main dish.
Ingredients
1/2 cup plus 1 tablespoon lemon juice
6 tablespoons olive oil
3 tablespoons minced fresh parsley
3 tablespoons grated lemon zest
1-1/2 teaspoons minced garlic
3/4 teaspoon salt
3/4 teaspoon dried thyme
3/4 teaspoon dried marjoram
3/4 teaspoon pepper
6 boneless skinless chicken breast halves (6 ounces each)
Instructions
1Prepare the marinade
2In a small bowl, combine the lemon juice, olive oil, parsley, lemon zest, garlic, salt, thyme, marjoram and pepper, stirring well.
3Marinate the chicken
4Pour 1/3 cup of the marinade into a large resealable plastic bag, then add the chicken. Seal the bag and turn it to coat the meat, then place it in the fridge to marinate for an hour, turning the bag at least once. Cover and refrigerate the remaining marinade.
5Grill the chicken
6Drain and discard the marinade from the bag. Grill the chicken, covered, over medium heat for five to seven minutes on each side or until a thermometer reads 165°F internally. Baste the meat occasionally with the reserved marinade as it cooks.
