Who needs takeout when you've got this quick and delicious honey chicken stir-fry! Simple ingredients and a full-proof method mean dinner will be ready in a flash.

Ingredients
2 teaspoons cornstarch
1 tablespoon cold water
3 teaspoons olive oil, divided
1 pound boneless skinless chicken breasts, cut into 1-inch pieces
1 garlic clove, minced
3 tablespoons honey
2 tablespoons reduced-sodium soy sauce
1/8 teaspoon salt
1/8 teaspoon pepper
1 package (16 ounces) frozen broccoli stir-fry vegetable blend
Hot cooked rice, optional
Instructions
1 Make the sauce and chicken
2 Make a cornstarch slurry by mixing cornstarch and water in a small bowl until smooth. In a large nonstick skillet, heat 2 teaspoons of oil over medium-high heat. Add the chicken and garlic and stir-fry for one minute. Add the honey, soy sauce, salt and pepper and mix well. Cook until the chicken is no longer pink, two to three minutes, and remove from the pan. Editor's Tip: How do you know when the chicken is done? Use a thermometer to check for doneness. It needs to read at least 165°F.
3 Stir-fry the vegetables
4 In the same pan, cook the vegetable blend in the remaining oil and stir-fry just until tender, four to five minutes. Return the chicken to the pan, and pour in the cornstarch slurry. Stir until everything is fully combined. Bring the pan to a boil, and cook and stir until the sauce has thickened, about one minute. Serve immediately, with rice if desired.
