Carrot Casserole
Carrot Casserole
20 min12 servings

Carrot casserole combines sweet carrots, browned onions, a creamy sauce and a crunchy topping. Made with just a few ingredients, it's a deceptively simple side dish that's truly greater than the sum of its parts.

Ingredients
8 cups sliced carrots
2 medium onions, sliced
5 tablespoons butter, divided
1 can (10-3/4 ounces) condensed cream of celery soup, undiluted
1/2 teaspoon salt
1/4 teaspoon pepper
1 cup shredded cheddar cheese
1 cup seasoned croutons
Instructions
1 Par-cook the carrots
2 Preheat the oven to 350°F. Place the carrots in a saucepan, and cover with water. Bring the water to a boil, and cook the carrots until crisp-tender.
3 Make the sauce
4 Meanwhile, in a skillet, saute the onions in 3 tablespoons of butter until tender. Stir in the soup, salt, pepper and cheddar cheese.
5 Assemble and bake
6 Drain the carrots, then add them to the onion mixture. Transfer to a greased 13x9-inch baking dish. Sprinkle with croutons. Melt the remaining butter, and drizzle it over the croutons. Bake, uncovered, for 20 to 25 minutes.
