Cranberry Almond Balls
Cranberry Almond Balls
2 servings

These cranberry almond balls are chewy and nutty, sweet and a bit savory. Whip up a batch of these no-bake energy bites to keep in the pantry for breakfast, snack time or dessert.

Ingredients
1 cup oven-roasted sliced almonds
10 pitted dates (about 2 ounces)
1 cup dried cranberries
1/2 cup old-fashioned oats
1/4 cup almond butter
1/4 cup honey or maple syrup
1/4 teaspoon salt
1/4 teaspoon almond extract, optional
Instructions
1 Chop the almonds
2 Place the almonds in a food processor. Pulse the almonds until finely chopped.
3 Blend the batter
4 Add the dates, cranberries, oats, almond butter, honey, salt and, if desired, almond extract. Pulse until the mixture is well-combined and sticky.
5 Shape the energy balls
6 Shape or scoop the batter into 1-1/2-inch balls. Editor's Tip: Since the balls won't be baked, they won't flatten at all, so aim for even shapes.
