Tea Cakes
10 min5 servings

When you're ready for a tea or coffee break, have these tea cakes ready. You won't be able to forget their soft centers and buttery vanilla flavor.

Ingredients
1 cup butter, softened
1-1/2 cups sugar
3 large eggs, room temperature
1 tablespoon vanilla extract
3 cups all-purpose flour
2 teaspoons baking powder
1/4 teaspoon salt
Instructions
1 Make the creamed mixture
2 Preheat the oven to 375°F. In a large bowl, cream the softened butter and sugar until light and fluffy, five to seven minutes. Add the eggs, one at a time, beating well after each addition. Beat in the vanilla extract.
3 Combine the dry ingredients
4 In another bowl, combine the flour, baking powder and salt, then gradually add this dry mixture to the wet mixture. You'll end up with a very soft dough.
5 Bake the tea cakes
6 Drop the dough by tablespoonfuls onto the greased baking sheets, 2 inches apart. Bake until the edges turn golden-brown, seven to eight minutes. Move the cakes from the baking sheets to a wire rack to cool.
