These cheesy cauliflower breadsticks are made with vegetables rather than grains but deliver all the savory, garlicky goodness of classic breadsticks.

Ingredients
1 medium head cauliflower, cut into 1-inch florets (about 6 cups)
1/2 cup shredded part-skim mozzarella cheese
1/2 cup grated Parmesan cheese
1/2 cup shredded cheddar cheese
1 large egg
1/4 cup chopped fresh basil
1/4 cup chopped fresh parsley
1 garlic clove, minced
1 teaspoon salt
1/2 teaspoon pepper
Marinara sauce, optional
Instructions
1 Prepare the cauliflower
2 Preheat the oven to 425°F. In a food processor, pulse the cauliflower florets in batches until finely ground. Microwave the ground cauliflower in a covered, microwave-safe bowl on high until tender, about eight minutes. Editor's Tip: When grinding the cauliflower, don't overfill the machine. You may have to do this step in two or three batches.
3 Drain the excess liquid
4 When the cauliflower is cool enough to handle, wrap it in a clean kitchen towel and squeeze it dry. Return the cauliflower to the bowl.
5 Make the dough
6 Meanwhile, in another bowl, mix the mozzarella, Parmesan and cheddar cheeses. Stir half of the cheese mixture into the cauliflower. Reserve the remaining cheese mixture. In a small bowl, combine the egg, basil, parsley, garlic, salt and pepper. Stir the egg mixture into the cauliflower mixture.
7 Bake the dough
8 On a baking sheet lined with parchment paper, shape the cauliflower dough into an 11x9-inch rectangle. Bake it until the edges are golden brown, 20 to 25 minutes.
9 Finish with cheese
10 Remove the baking sheet from the oven and top the dough with the reserved cheese. Bake until the cheese is melted and bubbly, 10 to 12 minutes.
11 Slice and serve
12 Cut the cheesy cauliflower into 12 breadsticks. If desired, serve them with marinara sauce on the side for dipping.
