Creamed potatoes are mashed potatoes' refined cousin. Perfectly cooked diced potatoes are gently tossed in a rich creamy sauce and topped with pretty paprika and bright parsley.
Ingredients
6 medium potatoes (2 pounds), peeled and cut into 1/2-inch cubes
3 tablespoons butter
1/4 cup all-purpose flour
1 teaspoon salt
1/4 teaspoon pepper
2 cups milk
Paprika and minced fresh parsley
Instructions
1Cook the potatoes and sauce
2In a large saucepan, add the potatoes and cover with water. Bring to a boil, then reduce to a simmer. Cook, covered, until tender, 10 to 15 minutes. In a smaller saucepan, melt the butter. Whisk in the flour, salt and pepper. Then, slowly whisk in the milk and bring the sauce to a boil until thick, about two minutes.
3Drain, sauce and serve
4Thoroughly drain the potatoes and place them in a large serving bowl. Add the sauce and gently stir. Sprinkle with paprika and parsley.
