This banana walnut bread is delicious, comforting and super speedy to prepare. It doesn't take much more than sugary bananas and crunchy nuts to make this beloved quick bread.
Instructions
1
Cream the shortening and sugar
2
Preheat your oven to 325°F. In a large bowl, use a hand mixer or stand mixer to cream the shortening and sugar until they’re light and fluffy. Editor’s Tip: It may seem excessive, but a fundamental component of how to cream fat and sugar is whipping the two ingredients together with the mixer on high for five to seven minutes. You’ll notice a major difference in the color and texture as the minutes go on.
3
Add the wet ingredients
4
Add the eggs, one at a time, beating well after each addition. Beat in the mashed bananas and milk.
5
Add the dry ingredients
6
In a large bowl, whisk together the flour, baking soda and salt. Gradually add the flour mixture to the shortening mixture just until it’s moistened. Editor’s Tip: Don’t overmix the batter here! Doing so will result in a dense bread. Instead, mix until everything is just combined.
7
Add the walnuts
8
Fold in the walnuts until they’re evenly dispersed throughout the batter.
9
Pour the batter into a greased 9x5-inch loaf pan. Bake until a toothpick inserted in the center comes out clean, 65 to 70 minutes. Let the loaf cool in the pan at room temperature for 10 minutes. Remove the loaf from the pan, and transfer to a wire rack. Let cool completely.
