Creamed Cabbage
Creamed Cabbage
1 servings

This rich comforting cabbage dish has plenty of old-fashioned goodness. The recipe is shared by Virginia Dishman of Lansing, Michigan, who admits she finds it a challenge to cook small quantities since she once fed a family of nine!

Ingredients
1 bacon strip, diced
2 tablespoons chopped onion
1 tablespoon cider vinegar
1 tablespoon water
1-1/4 teaspoons sugar
1/4 teaspoon salt
Dash pepper
2 cups shredded cabbage
1 small tart apple, peeled and chopped
1/4 cup sour cream
Instructions
1 Cook the bacon
2 In a skillet, fry the bacon over medium heat until crisp, then remove it to a paper towel.
3 Add the liquids and seasonings
4 In the bacon drippings, saute the onion until tender. Add the cider vinegar, water, sugar, salt and pepper, and cook until the mixture is bubbly.
5 Add the cabbage and apple
6 Stir in the shredded cabbage and apple, tossing until the slivers are glazed in sauce. Cover and cook for five to six minutes, until the cabbage is tender.
7 Add the sour cream
8 Stir in the sour cream and heat through, but do not boil. Top with diced bacon and serve. Editor’s Tip: Watch that heat! The lower fat content in sour cream means it can split easily, so you really only want to add it at the end and warm it through, no more.
