Tartufo ice cream is a dome-shaped dessert that hails from Calabria, Italy. It's made with layers of ice cream, cherries and crushed cookies enrobed in a rich dark chocolate shell.
Instructions

Press the ice cream into a bowl

Line a 5-inch glass bowl with plastic wrap. You want at least 3 inches of overhang. Scoop the chocolate ice cream into the bowl and spread it into an even layer so the ice cream is flat. Editor’s Tip: Take the ice cream containers out of the freezer 10 minutes before using so the ice cream can soften.

Add cherries, fudge and cookies

Place the cherries on top and press them into the ice cream. Spoon the fudge on top, then add half of the crushed cookies. Spread and flatten the mixture up to the sides of the bowl.

Add another layer of ice cream

Add the vanilla ice cream and spread it in an even layer. Press the remaining cookie crumbs into the vanilla ice cream to create a cookie base.

Freeze overnight

Fold the overhanging pieces of plastic wrap over the top of the tartufo and place the bowl in the freezer overnight.

Make the chocolate shell topping

The next day, place the dark chocolate chips and coconut oil in a small microwave-safe bowl. Microwave in 30-second increments, stirring in between, until melted. Set the chocolate topping aside.

Plate the tartufo

Remove the tartufo bowl from the freezer and carefully remove the molded ice cream from the bowl. Unwrap the plastic wrap and place a small piece of parchment paper on top of the cookie base. Flip the molded ice cream onto a wire rack on top of a baking sheet. Carefully release the ice cream from the plastic wrap. Pour the chocolate sauce in a layer over the tartufo. Serve immediately or place in the freezer until ready to eat. Editor's Tip: The chocolate shell will harden quickly, so work fast when adding the crushed hazelnuts to help them stick to the chocolate.
