This flavorful and easy pumpkin soup takes less than 30 minutes to make and is the perfect simple side for a gooey grilled cheese sandwich!
Ingredients
2 Tbsp butter ($0.26)
1 small yellow onion ($0.32)
1 15oz. can pumpkin puree ($0.79)
3 cups chicken broth ($0.39)
1/2 tsp chili powder ($0.05)
1/4 tsp nutmeg ($0.03)
1/2 tsp smoked paprika ($0.05)
1/4 tsp cayenne pepper ($0.02)
freshly cracked black pepper ($0.02)
salt to taste ($0.02)
4 Tbsp pepitas (pumpkin seeds) ($0.60)
4 Tbsp sour cream ($0.11)
Instructions
1Dice the onion then add it to a medium sauce pot with the butter. Sauté the onion over medium heat until the onion is soft and translucent (about 3 minutes).
2Add the pumpkin purée, chicken broth, smoked paprika, chili powder, cayenne pepper, nutmeg, and some freshly cracked pepper. Stir to combine the ingredients, then allow the soup to come up to a simmer.
3Simmer the soup for 10 minutes. Taste and add salt as needed (I added 1/4 tsp).
4Serve the soup topped with pepitas and a swirl of sour cream.
